Alcohol and residual sugars both contribute to the 'body' and 'mouthfeel' of a beer.  The science of optimising brewing conditions to extract a lot of flavour and aroma from the raw ingredients is complex, but has been mastered over millenia.  So it is a real challenge to turn the process on its head, to achieve the same level of flavour and aroma, whilst also creating a drink that doesn't feel like flavoured water or cordial.  Managing new water profiles, malt additions, hop combinations and adjuncts (like fruits and spices), that all behave differently in the absence of alcohol, are all part of the exciting challenge and innovation to enhance the flavour and mouthfeel of alcohol-free beers. This creativity ensures that these drinks can stand out in a crowded market.
